just go to the options menu and click on Settings. Then select "Rice's Video Plugin 6.1.1 Beta 10" Then go to Configure Graphics Plugin, click on Texture Filters and mark the option Dump Textures to Files. Finally, take a look at the project 64 folder. another folder will be created. This folder is where the textures are saved. Now here comes the worst part: The weapons graphics are saved in small tiles. You have to search and put all the tiles together.
EDIT: Ok, hang on. I don't have Rice's Video Plugin. I've had a look here and I think it's the right one, but I don't know where to download it. Putting it in the "plugins" folder causes a 'missing dll' message, even though I've just added an extra one.

I have to tell you, you guys must have the patience of a saint to be able to peice all those tiny little bits of weapons together to form the full picture.
