A (silly?) question

I wanted to play
this but gzDoom tells me that the
LANGUAGE lump had 575 strings while "this version of zDoom" expects it to have 576. What can I do to fix it?

Remove the LANGUAGE lump. That's a known issue with it and has been plaquing ZDoom for quite some time.. It isn't worth fixing because the upcoming ZDoom version uses a completely different method to define strings which should be more user friendly and then this WAD wouldn't work anymore anyway.
The only issue with this WAD is that some key messages specify an incorrect key color.

It works fine, thanks!
(Looking at the lump, and trusting in your statement that the future string redefining system will be a user friendly one, it should not be that hard to "convert" it manually, I guess.

No. AFAIK the only change is that it renames one key and the 2 messages for it. Nothing serious.
